Whole Wheat "Omelet"

My kids love these on Saturday mornings and they cut down on all the dietary cholesterol of eggs. I know it sounds weird to eat syrup with an omelet but it really works with these, so feel free to add a tablespoon or two. Enjoy!

5 cups whole wheat flour
3 cups unbleached all-purpose flour
1/2 cup white sugar
2 1/2 tablespoons baking powder
4 teaspoons baking soda
4 teaspoons salt
5 eggs
4 cups of milk
4 tablespoons of canola oil


Pre-heat a non-stick skillet on medium heat.

Mix all the liquid ingredients and dry ingredients separately before stirring together.

Ladle out a portion, and gently pour into the skillet.

Cook until the edges firm up and then flip and continue to cook until done.
