Easy, Low Calorie, DELICIOUS Quesadilla!

Hello all :) I found this amazing recipe on pinterest the other day and decided to make it today for lunch!
One word, DELICIOUS!
I thought i would share it with all of you :)
It is a great idea for a lunch or dinner! It's up to you :)
FYI... The original recipe called for sugar and salt to make the onions caramelized, but i chose not to do so.

Ingredients:
1 Small Flour Tortilla (90 cal)
1oz of Regular Goat Cheese (70 cal)
1/2oz Chopped Raw Onion (5 cal)
23g of Chopped Bell Red Pepper (8 Cal)
1.5Tbsp Salsa (8 cal)
0.13oz Organic Baby Spinach (3 Cal)

Directions:
Fry up the onions and red peppers until they start to show some color (as dark or light as you'd like), and as they are frying, spread the goat cheese on to the tortilla. Once the onions and red peppers are done, put them onto half of the tortilla, then place the tortilla onto the pan (not on the heat yet). While the tortilla is still opened fully, place the chopped spinach on the same side as everything else, then fold the tortilla. Place it on the heat for just a small amount of time (dont forget to flip it to get both sides). Once off of the burner, put the salsa into the quesadilla and ENJOY!
I swear this was soo delicious!

    Looks really good. I'm just wondering, what did you fry the onions in and did you include that product in the nutritional info? I love all things goat cheese and will try this recipe this weekend. Thank you for sharing.

    If you didnt want the cheese in there, you should sub it with sweet potatoe. yummy!

    OMG........i had something similar to this, but i put way more goat cheese than necessary (it was overpowering) and i did not add spinach.
    In looking at this recipe, i think i will make it again - - - using the "correct" amounts!
