I am firm believer in the power of communication, because the lack therof causes sheer chaos. With that said, Is it possible for you to sit down with your wife and express to her your concerns? Did you intervene at all when you son wanted steak and potatoes? I was under the impression that children should not intake artificial sweeteners.
I hope other members offer you some tidbits that you can benefit from.

Your poor wife (and I mean that with all due respect, because I totally empathize with her!) is projecting her fears of weight gain and her low body-esteem onto your children. You and your children cannot help her, only she can help herself.
But you CAN help yourself and your children. Get him fed. Healthy, but full of good calories. Peanut butter, milk, chicken, etc. There are healthy versions of these things (and I do NOT mean low-fat...that crap is SO bad for you).
After you feed your son, help your wife get therapy. It helps more than you (or she) know.0 -

You probably shouldn't emasculate the man OR turn him into a demanding husband. He came here for support. How about something alone the lines of, "Be a strong supporter of her goals, but be firm and look out for the health of your son."
