Hi. I am having a hard time finding foods that are healthy for me and easy and fast to cook using a microwave and limited refrigerator space. I am also getting bored with my snack ideas. So if anyone has any suggestions that would be great.

when i was living in a dorm i kept nuts and apples around for snacking. i also went to the store every 3 days or so because of not having space.0

Rotisserie chicken portioned out, steamed broccoli, brussels sprouts etc. in microwave and pre-cooked microwave rice would my first go-to.0

I did this for a good three years...and it sucked. But sweet potatoes keep well. A little jar of cinnamon sugar doesn't take up space and a tub of smart choice spread. Nuts, YOGURT was huge for me, hundred calorie snack packs, PB, carrots.0

You can make eggs in the microwave! Get Pam-type spray and those carton eggs that are just whites for the healthiest (err.. lowest calorie?) way to make it (personnally have no issue with yokes, lol- whole eggs are totally managable in a healthy diet... but the yokes are the part of the egg that will explode in the microwave, so kinda easier to start with just egg whites).
eta: Something easy to do - scramble the eggs in the microwave, make some chicken/turkey bacon (again, in the microwave), use whole grain wraps, some cheese (I use laughing cow- spreads easy and less than 30 cals for 1 wedge) and some salsa and it tastes great 1 is pretty filling, but if I'm extra hungry will have 2 and either split the cheese or bacon, depending on how many calories I can afford.
You can search the boards or google for how to cook eggs in the microwave- it's been trail and error for me to find the right temps and right way to do it, and seems to depend on the microwave. I have to use diff times for the microwaves at work, home and my bf's place (heh, yes, I could just cook them at home and bfs place... but meh)...0 -
