Finally! Crispy Sweet Potato Oven Fries!

After many, many experiments with sweet potato oven fries to get them crispy on the outside, a solution! Buttermilk powder!
Just this.
-Peel the sweet potato and cut into thick fries.
-Shake in a bag with a couple tablespoons of buttermilk powder.
-Shake off any loose powder and place on a cookie sheet lined with parchment paper (or fight with the stickiness).
-Optionally, spray with a bit of olive oil spray.
-Bake in a pre-heated 400F (205C) oven for 10 minutes.
-Flip each fry. Bake a second 10 minutes (20 minutes total).
-Poke the fattest one with a fork. If it's soft they are done. If not give them a couple more minutes.
-Season with salt as desired.

Nutritional info? Where do you get buttermilk powder. Is that like the ranch dressing mix?
Buttermilk powder is available in many grocery stores, often shelved near the evaporated milk and instant milk. It is also good for making rye bread, buttermilk biscuits, pancakes, etc. You need to store it in the fridge but it keeps a long time. The Saco brand (which is the most common in the supermarket) has 20 cal. per tablespoon.
