HEAVENLY SPINACH STRAWBERRY SALAD.

1 lbs. baby spinach
1 1/2 cup pecan halves
1 1/2 cup sliced mushrooms
1 pint strawberries
1/2 lbs bacon cooked and crumbled or just omit if your too much a health freak.
toss above ingreds with below dressing.

DRESSING

1/4 cup balsamic vinegar
1/3 cup olive oil
1/3 to 1/4 sugar, it calls for 1/2 but we find that is brutal. we use 1/3 cup.
1 tsp paprika
2 tsp sesame seeds
1 tsp poppy seeds
1 tsp chia seeds
2 green onion finely chopped
combine in glass jar and you can make it a day ahead for better flavouring
even a few hours, keep dressing in fridge.

    Ooooh. I like making this. I usually use a sun dried tomato vinaigrette but this dressing sounds good.

    I did something similar the other night but added:

    6-8 bite size chunks of Thai flavoured Chicken Breast (or any spicy or not spicy chicken you may want)
    sprinkle of blue cheese (or cheese of your preference)
    spinach
    strawberries
    pecans

    Dressing (1 TBSP fat free mayo, 1 TBSP white vinegar, 1 TBSP splenda). This dressing is amazing on everything by the way, including coleslaw and potato salad!
