Asian chicken with broccoli and cashews, under 270cals!

This is truly one of my favourites, I've used almonds when i've realized I have no cashews :sad:

1 lb chicken breast, skinless, boneless
2 garlic cloves, minced
5 cups of broccoli florets
2 red peppers, sliced into strips
1/2 cup water
1/4 cup orange mandarin sesame dressing, I use President choice
1-2 Tbsp light soya sauce (I only use 1 Tablespoon)
1/4 tsp red pepper flakes
1/4 cup roasted jumbo cashews

Heat chicken and garlic in large non stick skillet on med-high heat, cook around 8 minutes, until chicken is done. Remove it from skillet and keep warm. Add your broccoli, red pepper abd water until broccoli is crisp tender, stirring occasionally. Stir the chicken back in and ll the remaining ingredients exceot the cashews. cook around 2 min or until heated through. Top with nuts! YUMMO!

This is 268 calories, fat 10 g (2g sat) carb 12g, protein 31g. Serves 4..

My daughter will put this in a WW tortilla and make a wrap for lunch the next day, without the cashews.

    Hm, thanks for the recipe, wonder how it'd turn out with the ingredients I have in the house, red peppers and garlic....might be lacking a bit?

  • Your recipe was awsome, thank you! I made it last night.

    I had everything in the house except for the dressing, so I substituted 1 packet of McDonalds sweet and sour sauce, and mixed it with the soy sauce. It didn't really change the calories for the recipe.
  • Oh my, my husband is going to fall in love with me now. :laugh: He loves Asian cooking and since we both went on this diet together we have stirred away from Asian foods that we both love because, of worry about fats and calories.     Looks delicious. Why is it so high in fat, though? Is it from the cashews? If I didn't put the nuts in, surely it wouldn't be so high in fat. Have you by chance tallied without the nuts?

    BTW, how'd you get your abs to be so tight? I'm thin and fairly tone everywhere but my abs! I do 200 sit ups a day (varied types) and just can't get that ripped look! Great job on your part! :)

    The nuts make it high, I don't count calories anymore and my body thrives on the fat from nuts..they really are very good for you! it's good fats, so I wouldn't worry much about it. I got my abs not by doing situps, I don't do them! it's from core work, but from ab work that doesn't require tradional crunches, I do mountain climbers, leg raises, planks, floor sweepers, and when you lift free weights, your core is constantly engaged....but more importantly it's your diet, a pretty clean diet, is what is going to get you that 6 pack ab that you want.
