Please help a fussy eater

Since deciding it was time to get healthy, food has suddenly become one of the more stressful parts of my day. It's not that I'm denying myself things so much and therefore get hangry, it's more a case of not liking enough to even meet 1200 calories half the time. I'm trying to make healthier choices in respect to what I put into my body, but meal times are becoming increasingly difficult and boring to plan. More often than not I just have some variation of a lettuce/spinach based salad with some chicken or fish thrown in.

I've looked around in cook books and checked in with the all knowing master Google, but it seems every filling recipe requires rice, pasta, quinoa, peppers etc. I don't like any of that. In fact, I don't have a great love of carbs really, and I cannot stomach spicy food which is what people suggest for flavour. The texture of a tomato bursting in my mouth makes me cringe, as does the taste of squash.

So in a last bid attempt, I figured I'd post this and see if anyone has any suggestions to help out a difficult eater. If not I guess I'll jut have to stick with the salads. Yay.

    Well what did you eat before to get over 1200 cal?

    In honesty, I don't really know. I'd often just have a sandwich for lunch and then one again for dinner, perhaps a take away once a month or something. I've never been a breakfast eater. I've never particularly eaten a lot, just what I did have never contained much nutrition. But now I'm working out, I find a get a lot hungrier and I do try to fuel my body properly, but I'm just having a hard time doing it.

    Other than sandwiches, what DO you like to eat? We can't really suggest things if we only know what you hate because you'll likely down the suggestions.

    I like chicken and turkey, all kinds of fish and fruit. Broccoli, spinach, occasionally sweetcorn. I'll sometimes make homemade turkey and apricot burgers which are nice, but hardly something I can live off on a daily basis =] I'm okay with quorn too, used to live with a veggie so we just made our meals together. The only problem with that was was often had lasagna or other dishes involving copious amounts of creamy sauce.

    I feel like one of those people on those programmes who has a 'super skinny' diet, except I don't have the body to go along with it :laugh:

    how about making soup or juicing? you'll need a juicer but they'r the most healthiest things i can think of, great for packing a lot of nutrition in. or adding veg to homemade dinners eg lasagne - add grated carrots ect. putting veg in your sandwich's eg tuna+ sweetcorn. best of luck

    Well, all of that sounds great! What I've personally done at times to up my calories is to just add calories to the things I already like to eat. For example, a second slice of cheese on a sandwich or a slightly larger portion of meat. Add an extra snack. Hard boiled eggs are good, nuts, avocado.

    Right there with you as a picky eater myself....you actually are doing better than me in that you like veggies! Looking forward to the advice others give you. ;-)

    Doesn't sound like you're a "Fussy" eater...sounds like you're more of a "Junky" eater. We all got hooked on S.A.D. and that killed our taste for quality food...You will have to introduce yourself to quality, healthful food slowly. "Change Your Diet, Change Your Life!"

    I'm not sure I'd call myself a junky eater. As said before, other than the odd take away or cake, I usually eat okay. Processed foods and things with added sugar etc more often than not turn me off. And I do not smother anything in condiments or salt. I do however take issue with textures and things that sit too heavy on my stomach, hence the dislike of many high carb foods.

    I did buy a blender the other week and have made a few nice fruit smoothies :smile: I was looking into green smoothies as well to try and get some more of my 5 a day in, but I'm worried about the taste.

    The 'add extra' suggestion also sounds good. I'll have to overcome the niggling feeling of guilt of having more than I'm used to, because obviously what I'm used to hasn't been working out all too well!

    Yes, adding a little extra works for me because it ups the calories and doesn't make you really feel like you are eating constantly or really over eating because it's just a little boost.

    How about stir-frying vegetables in EVOO to alter the texture and get some fats in?

    The foods that you currently don't like maybe you just did not like the method in which they were cooked or seasoned. I hate tomatoes in a salad but I love tomatoes that are roasted or in a sauce. Try some recipes from skinnytaste.com and you will find recipes that you will love and be able to keep in rotation! The healthier you eat your taste buds will begin to change. Good Luck1

    well you have a lot to work with.

    the important thing is to plan your meals and make ahead so you always have good choices. I roast a bunch of chicken breast/whole skinless chicken/turkey once-twice a month, as well as some chicken /turkey lentil patties. freeze on a tray then throw into a ziplioc, have the bread you like in the freezer as well. buy y our fresh veggies 1-2 a week, and steam, stir fry. add some cheese, hard boiled eggs, salad veggies and you can put together countless meals. I rarely eat out ( I'm talking maybe a number of times a YEAR and that's usually if I am traveling), I take breakfast and lunch with me to work ( we have a small fridge and microwave), and eat supper when I get home

    I make vegan lasagne and often never use the creamy sauce, I honestly think it's still really nice, and coupled with salad it should be lovely.

    Also, you can make very mild chicken fajitas?
