Garbageless Lasagna

Some of you may be looking from a lasagna recipie and this is the lasagna I've been using and it's great

8 ounces lasagna noodles
1 pound lean ground beef
2/3 (28 ounce) jar spaghetti sauce
2 pounds ricotta cheese
1/2 cup grated Romano cheese
1 egg
1/4 cup dried basil
1 clove garlic, pressed
1 (8 ounce) package sliced pepperoni sausage
8 ounces mozzarella cheese, shredded

Preheat oven to 375 degrees F (190 degrees C).

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In large skillet over medium-high heat, cook beef until brown; drain. In small saucepan, heat spaghetti sauce.

In a medium bowl, stir together ricotta, Romano, egg, basil and garlic.

Coat the bottom of a 9 x 13 baking dish with a thin layer of spaghetti sauce. Place 3 or 4 noodles, overlapping edges, over sauce. Spread half of ricotta mixture over noodles. Cover ricotta with half of browned beef, half of pepperoni slices, and 1/4 of mozzarella cheese. Repeat sauce, noodle, ricotta, meat and cheese layers. Layer sauce and noodles again, and pour remaining sauce over all, being sure to cover the edges. Top with remaining mozzarella.

Cover pan with foil and pierce foil 3 or 4 times with fork to ventilate. Bake 45 minutes, remove foil, and bake 15 minutes more to brown the top. Let stand 10 minutes before serving.

    ****, is not lasagna unless you make your own sauce....FAIL!

    and way more than one clove of garlic is needed....i usually use 1/2 to 1 head of it.

    Let me help you out a bit here.

    First, you make the sauce. You make meatballs and meat sauce at least one day before, specifically, with pork/veal/beef mix and sausages. In a pinch, ground beef will do but you must have sausage since it flavors everything. You triple the recipe, because you are going to have all your cousins over and lots of wine and you'll have salad after dinner, not before. That's like... at least 20 cloves of garlic right there.

    Then, you have that awesome spaghetti dinner, though, with such a bold sauce I really recommend linguine. Refrigerate the leftovers.

    THEN, the next day, you get up, with a bit of a wine hangover, and you smash up all those meatballs and sausages and use the leftover sauce to make the lasagne. But then you realize you all ate too much the night before so in a panic you run to the store at the last minute and get some extra sausage and some ground beef that's on sale and fry it all up and mix it in with the smashed meatballs and then the next time you try to make it doesn't come out exactly the same but it's just as awesome!
