"LOADED" CAULIFLOWER

1 cup cooked cauliflower
1 teaspoon butter
Salt and pepper, to taste
1 ounce cheddar cheese, shredded
1 tablespoon ranch dressing or sour cream
1 strip bacon, crumbled
1 teaspoon chives
Butter and season the cauliflower. Place in an individual-serving baking dish, then top with the cheese. Microwave or broil until the cheese is melted. Top with ranch dressing, bacon and chives.
Makes 1 serving
Do not freeze
Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

Doesn't sound like I can work this one into my diet plan. Not very low in fat which is what we all are trying to eat less of. Sounds delicious though, but I'll go look around for a healthier version.0

You might like this crazy variation of this cauliflower recipe that I make from time to time.
First, replace the cauliflower with 3 scrambled eggs. Cook them in the butter.
Then instead of putting the rest of the ingredients (except the ranch) ON TOP of the cauli .. uhhh eggs, you put it (wait for it, this is the part where I'm thinking WAY outside the box ... ) INSIDE the eggs. Then top with ranch.
Radical, but this is definitely tastier than the original cauliflower recipe. I call it Loaded STUFFED Cauliflower0 -

I know this is bad but I love heated cheese wiz (in the jar) on top of cauliflower and broccoli etc..so good.0
