    One of my favorites is "Bodybuilding Pulled Pork" which is adapted from a recipe from Chef Robert Irvine.

    1.5-2 lbs pork loin
    4-6 Cloves
    Rub of your choosing
    1 Red Onion
    Water to cover
    Dash of liquid smoke (optional)
    BBQ Sauce (optional)

    -12-24 hours before cooking, rub pork loin with rub of your choosing (I use a coffee based rub) and stud with 2-3 cloves per loin depending on size.
    -Place pork in Crock Pot
    -Cover with thinly sliced red onion (it will look like a lot of onion, but it cooks down)
    -Mix liquid smoke with water (optional)
    -Pour water over onions pork to just about cover the pork
    -Cook on low for 10 hours, remove, let cool for 10 mins and shred with fork
    -Drain remaining liquid from Crock Pot, return pork and toss with onions (Add bbq sauce if desired, but I don't)
    -Cook on low for an additional 30 mins
    -Serve on a roll, over rice or on its own
    -Will keep in a sealed container in the fridge for up to a week

    OP - can I assume you use a big (5-6 quart) crockpot? Trying to sort out how best to size these down for my 2-3 quart (single person) crockpot :-)

    Is crockpot cooking any good then? Have been thinking about getting one and can't decide if it will sit on the shelf...

    I never thought I'd use one until I pulled the trigger and got one. Being a bachelor, there's nothing better than coming home from work to a home cooked dinner sitting on my counter.
