Keeping Track of Food Intake

I use the Food Log pretty much every day and I'm a little unsure of if I am using it correctly or not. Each day I usually have about 100 or so extra calories left over and a couple grams of fat left over, should I be eating the exact amount of calories and fat that the Food Log says? If I am usually under will this prevent weight loss?
