In Need of FISH Recipes

My dad loves his fishing but they don't always eat it fast enough, so my mom just gave us a box full of frozen fish. We're talking mostly trout with some bass, rock fish, and crappie. I am not usually a huge fish eater because #1 the bones (my dad does a decent filet job.....but there inevitably is going to be 1 or 2...ruins the whole dish ...) and #2, I always over cook it. And while we're talking recipes...try to think simple. We are on a tiiiiiiiiiight budget right now.

Easy peasy!
Salt, pepper, lemon dill.
Spray some non-stick cooking spray in a baking dish, cook at 350F for 15 minutes, check for doneness (will it flake with a fork), cook more if necessary.0 -
Trout Pan fry in butter or butter + squeaze of lemon at the end. Couldn't be easier! You can also add capers to a lemon butter sauce, if you like capers. Dill is great too.
Crappie I'm pretty sure I've only had fried. Which is yummy, but may not be what you're looking for...
I love pretty much all fish blackened, which is just blackening seasoning and grilled or baked.0 -

dip in a little flour with some old bay seasoning, egg, and then panko. Bake on top of a cookie cooling rack in the oven at 425 for about 15-20 min. Tastes just like a fried fish dinner...but way cheaper and healthier!0
