Meatless Monday

This may or may not have already been posted, But does any one here participate in meatless Mondays? What are your thoughts on going meatless for a day? If so what kind of dishes do you like to make? Maybe post some recipes for those of us that do. I have been doing meatless Mondays now for a few weeks and i am finding more often then not that i like veggie only dishes. Plus it does save a bit of money by buying less meat.

This actually sounds kinda cool. I don't restrict any foods, but I think doing something like this for the lulz could introduce me to some delicious new foods.0

I was a vegetarian for several years so I still make some of my favorite vegetarian recipes on occasion. Honestly I tend to just do a big batch of roasted vegetables once or twice a week for dinner, usually after a day with red meat or something meat heavy.0

I've been wanting to go Vegan for quite some time, but I always go for the dairy I've given up milk but the rest has proven to be troublesome. Maybe I'll do a dairy free Monday and start from there0 -

ETA: Obviously, don't eat the bacon to make it a Meatless Monday thing.0 -

I would love to see some vegetarian/vegan diaries to get more ideas. Anybody with an open diary eat around 2000 calories with 120g of protein? I'm not opposed to trying something new (especially if I can save money) I'd love to get 120g protein day ideas from vegans or vegetarians.0 -
My employer launched a campaign years ago called Meatless Mondays to encourage us to eat more veggies and allow your creative food juices to flow without meat. Several in my office are now vegetarians as a result and other staff feel they save money on meatless Monday.0

Back in February I decided to try reducing my meat intake. Haven't eaten meat (including chicken or fish) since, and I've decided that I will only eat animals I kill myself. I've got a few in my freezer (trout), I'm just not quite ready to drop the vegetarian thing.
I also reduced my egg intake from 1-2 dozen per week to a dozen or less every couple months, and my dairy intake is quite limited, typically only if I eat out, though I don't go out of my way to avoid it.
I haven't been exercising much in the last 9 months (since my son was born) so my weight hasn't changed one way or the other very much, BUT I feel leaps and bounds better than I used to. It has to be the meat, or possibly the eggs, that made me feel like crap all the time, even 100+lbs down.

Lunch is chick pea salad with humus, seitan and red pepper sandwich ( yummy)
Dinner is a tofu stirfry.
I kind of failed because I think I have too many calories ( about 25% calories from protein). Plus there is no room for wine:P
Btw. This is why I'm not vegan: it is so much easier to meet my daily needs with some Greek yogurt or cheese.0 -
I love grilled portobello mushrooms. I marinate them in raspberry walnut salad dressing and grill, then serve on a bun with provolone cheese. So good!0

You can't buy seitan at my local grocery store, but apparently it can be found in grocery stores. I make my own out of wheat gluten which can be found at grocery stores and at health food stores. I buy nutritional yeast at health food stores, this isn't necessary but it does add B 12 which is important and yummy:). There are lots of recipes online. I have a Favourite which is seasoned with ginger, garlic, brags, sage and thyme.
I need to do lots of home cooking to be vegan. On weekends I make seitan, curried lentil and quinoa soup and a chili or so etching similar to last the week.
I think this thread is about meatless Mondays which means vegetarian to me.....there are many casseroles that have cheese in them like cannelloni, moussaka, quiche, or Mac and cheese which are meatless.
I also should also mention all the convenient meatless products that can be bought
Like hot dogs and burgers, etc.: some provide protein that is on par with chicken or beef.0 -

I tried to make a 240gm protein day. Calories are pretty high though.
Honestly, I personally have a hard time having 100 grams a day. (It would be easier if I didn't drink wine).
But I've made a choice, and I'm pretty confident I'll be getting stronger and building muscles once I start training:)0 -
Check out my diary. Plant based, it fit my macros, over 100 grams of protein, tasty, and I still fit in some wine!
Ok I did eat 1 ounce of goat's cheese. But that was only four grams of protein.
I'm not trying to convert anyone, I just took this on as a challenge for myself because I do usually fall under with protein.0 -

Yes. I *think* you could stay healthy and build muscle on a plant based diet if you read up on it a bit and make sure you have what you need. ( B12 is very important ) But if you like whey protein, meat and other animal products, and it's working for you, why would you?0
