Awesome Quinoa and Black Beans Dish

Great quinoa and black beans dish. I only used one can of black beans instead of two and added bell peppers and a little cholula sauce (hot sauce). I also used canned corn instead of frozen. Turned out just fine. It was AWESOME! Great for meatless mondays!

Ingredients:
1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed
and drained
1/2 cup chopped fresh cilantro
Directions:
1.Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
2.Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes.
3.Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro

Sounds delicious. I make something very similar. Try adding some chopped red bell pepper and a splash of lime juice for an added flavor zing!

OP didn't specify how many servings but when I typed it in it came up with 1,640 calories for the entire recipe. I assumed this would serve about 4 people, which would be 410 calories per person.0 -

I make this recipe all the time and it ROCKS. I like to add some Rotel tomatoes w/ green chiles for an extra kick. Also, two cans of black beans is a LOT of black beans. I usually only use one and it is more than enough. I could eat the whole pan myself!0
