Ingredients:
3/4 cup whole wheat flour
1 cup other flour of choice ( i use bob's low carb baking mix)
1/4-1/2 cup truvia
2 tbsp milled flax seed
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1 tsp nutmeg
1 tsp ginger
½ tsp of orange zest
½ tsp salt
½ cup unsweetened applesauce
2/3 cup of almond milk
¼ cup water
2 tsp vanilla extract
1 cup grated carrots (200g)
1/2 cup reduced sugar craisins

Directions:
1.Preheat the oven to 400 degrees and grease 5 mini loaf pans or a muffin pan (makes 10 muffins at 128 calories a muffin)
2.Combine all the dry ingredients until mixed well.
3.Add in the wet ingredients and mix until just combined
4.Grate carrots. Mix the craisins and carrots into the batter.
5. Pour equally into the pans. Bake for 20 min.
