Healthy Chicken Enchiladas
A recipe from the Wellspring Academy (Too Fat For Fifteen school) website. They were delicious. Nutrition information is below if you can find these exact ingredients. Because I couldn't find entirely fat free cheddar cheese or tortilla's they were a few more calories, about 245 each.
WHO ARE YOU CALLING CHICKEN ENCHILADAS?
Ingredients
1 cup onion, chopped small
1 ½ cups shredded cooked chicken breast
1 cup fat-free cheddar cheese, shredded (I used 2% milk Kraft)
1 cup picante sauce
3 oz fat-free cream cheese
1 tsp cumin
8 each fat-free flour tortillas (Tomaro's make a 95% fat free tortilla that is unrefrigerated)
1 ½ cups green taco sauce – bottled (I used Frontera Tomatillo)
non-fat cooking spray
Method
1. Preheat oven to 350 degrees.
2. Spray a large skillet with non-fat cooking spray and heat over medium heat.
3. Add onion, and sauté until tender.
4. Add chicken, ½ cup cheddar cheese, picante sauce, cream cheese, and cumin. Cook until cheese melts.
5. Spoon about 1/3 cup chicken mixture down center of each tortilla, and roll up.
6. Place enchiladas in a 13 x 9-inch baking dish that has been sprayed with non-fat cooking spray; drizzle with taco sauce, and sprinkle with ½ cup cheddar cheese. Cover and bake for 15 minutes or until cheese melts.
Serve immediately. Serve with your favorite salsa or fat-free sour cream
