and I'm thinking of going out back, picking a bunch and trying to make tea. I have some annuals, a few perennials (HUGE flowers)
and might just go for it. what do youns think?

I've only ever had the ones that come in syrup that you put in sparkling wine. They were very tasty

I think they make a nice tea after they are dried, but I usually pick buds for that.

Lots of flowers are edible. Rose (and hips), pansies, violets, nasturtiums, borage, calendula, squash, clover, lavender, chive, artichoke (duh LOL) . . . those are just the ones I can think of in my yard right now.

They're bitter. I shred hibiscus, nasturtiums and pansies into salads when they're available. For me it's just lovely to look at, more for style than taste. =(

Lots of recipes out there for agua de jamaica, a Mexican version of hibiscus tea (probably other countries make it too). As others have noted, most recipes seem to call for dried flowers. Could be a fun project, though!

In Caribbean countries, te jamaica (hibiscus tea) is huuuuge. It's like grown-up kool aid, and it's packed with vitamin C. I like to add hibiscus concentrate to citrus-based smoothies, or drink it diluted with water, a little lemon, and a touch of sweet. I hear fresh hibiscus flowers are great on salads.

A Mexican restaurant near me has a delicious Hibiscus Margarita. Can't really offer any opinions on the taste since the tequila probably makes it more wonderful than it really is.
