Peanut Butter Protein Muffins

These are made with no flour, oil or butter, but still have a wonderful muffin consistency! Only 100 cals each with 7g of protein.

Ingredients:
1/2 cup Cottage cheese
1/2 cup Applesauce
1/4 cup Natural peanut butter (can melt in microwave to help blend)
1/2 cup Egg beaters (or fresh egg whites)
1 3/4 cups Old fashioned oats
1/4 cup Protein powder
1/2 cup Baking stevia
1 tsp Baking powder
1/2 tsp Baking soda
1/8 tsp Salt
1/4 cup Low fat milk

Preheat oven to 350 and spray a 12 count muffin tin with Pam (do not use paper muffin liners - they will stick). Mix all ingredients into blender or food processor and blend until smooth. Pour evenly into tin and bake for 20-22 minutes until golden brown on top. Store in fridge. Enjoy!
