Red Lentils served with Spinach and poached egg.

So I just had this for dinner, and Jeez Louise, it was absolutely delicious! I shall add pictures to this post soon!

SERVES 4-6

You will need:
2 tsp Olive Oil or Vegetable Oil
1 1/2 tsp Cumin seeds
1 Clove of Garlic, minced
1 1/2 tsp grated Ginger
1 cup Red Lentils
2 cups vegetable or chicken stock
Handful Fresh Parsley (Coriander works well too)
Light sprinkling of Marjoram

1-4 eggs (depending on how many people you serve)
White rice vinegar (2 tsp)

Fresh Spinach

INSTRUCTIONS

Heat your oil and add in your cumin seeds,garlic and ginger.
Stir frequently and stop cooking before the 2 minute mark.

Add Lentils and stir into your oil allow to sit on the heat for 1 minute.
Add 1 cup of your stock and stir, once it starts to absorb begin adding your second cup.
(add more if needed) Add in your Marjoram
Stir Frequently and remove from heat after 20 minutes. Add in Parsley and stir.

Serve along side fresh Spinach

POACHING YOUR EGG

Fill a shallow saucepan with water, and allow it to simmer. Just before it is about to boil add in your rice vinegar.
Crack eggs into small cup, hold it close to the surface of the water and gently drop it in. Gently push egg whites inward towards yolk so that it holds it's shape.

Turn off heat and place lid on saucepan, allow egg whites to cook for 4 minutes, before removing with slotted spoon and serve.

    Are the lentils dry to start off with? Just wanted to check as I've heard you can get them tinned. Sounds lovely!
