Simple meal plan to watch my calories and carbs?

Hello,
What's a good and simple meal plan to watch my calories and carbs?

Everyday I eat,
2 eggs, scrambled
Cesar salad
Rice with chicken breast or fish
+ An occasional snack.

How could I improve on that but still retain the simplicity of it? I've heard having a cheat day is good for you. Is that correct?

    Change salad dressings, Hop up the salad with different veggies, Get a rice cooker and do brown rice or quinoa. Experiment with low cal sauces and topping for the chicken and fish. Try pork loin slices, they are easy to cook and close to chicken breast in calorie density.
  • Easy on the eggs too, that's a lot of cholesterol. Other than that, more dairy. Your body does need fat and dairy will slow the absorption and make you feel full for longer
