Thanks for the recipe! As a diabetic, potatoes are NOT my friend. Taters might be friends of some of you out there, but don't go getting mean on the nice OP who gave folks like me another lovely way to enjoy a snack.

You have just discovered you like baked cauliflower. Well done! Now try it with other veg, roasted sweet potato, potato, onion and carrots all work really well!
Also, there is no need to omit the olive oil, IT IS GOOD FOR YOU! Please don't be fooled into thinking because fat is calorically dense that you have to leave it out of your diet. Dietary fat will not make you fat, and a lot of 'dieters' are putting their health at risk by removing very healthy unsaturated fats from their diets.
That said, I'm glad you have some way to get some veg in your diet. Keep experimenting.0 -

Bought some last week to try "mashed" vs. regular potatoes! Im excited! I've made low carb pizza with cauliflower as the crust, was kool and tasty!

I had these tonight after seeing them on here today. I must say they were just ok. to me. and I love cauliflower. but might have them again. lol0

I tried this last night and although it tasted nothing like french fries to me it was yummy. The crunch and teh coating really make it work. I will try it again with maybe a parmesian based coating.0

Try this with butternut squash. My husband LOVES butternut squash fries, and that's saying something considering he has the taste preferences of an 8 year-old boy.0
