Pumpkin Oatmeal Chocolate Chip Cookies...

Very Low Fat and Low Sugar! 66 calories per cookie (if you make 24 cookies)

Ingredients:

1 cup all purpose flour
1/2 cup of oats (either old fashioned or quick)
1/2 tsp baking soda
1/2 tsp cinnamon
a little less than 1/2 cup applesauce
1/2 cup light brown sugar
1 egg
1/2 tsp vanilla extract
1/2 cup pumpkin puree
1/2 cup chocolate chips

Directions:

1. Preheat oven to 350 degrees F. Combine flour, oats, baking soda, cinnamon.
2. Mix applesauce, brown sugar, egg, and vanilla, stir well. Add pumpkin puree, stir well. Gradually stir in the dry ingredients until well blended. Mix in chocolate chips. Drop by rounded spoonfuls onto cookie sheet.
3. Bake for 8-10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
4. Enjoy!

    Can you actually taste the pumpkin?

    The pumpkin flavor is mild...I can taste it, but I am not a huge fan of things strongly pumpkin flavored (aka pumpkin pie)

    I made these the other night, substituting sucanat for the brown sugar, and they are YUM! My 2 year old daughter loves them as well. Thanks for sharing!

    ETA: I also used 72% dark chocolate, chopped up, instead of the chocolate chips. Worked great!
