monday - creamy tomato basil soup
zucchini fritters
salad with craisins, almonds and feta cheese
kiwi and strawberries

tuesday - asian chicken with broccoli and cashews
thai coconut rice
garden green beans
watermelon
crustless pumpkin pie

wednesday - turkey, bacon and gouda cheese in a crusty baguette
yogurt
sweet potato homestyle fries
plums

thursday - grilled make-your-own-pizza on sweet bread
summer squash
grilled peaches
almond bark pretzels

friday - eat out at 'marcel's'

saturday - leftovers

sunday - chili with avocado
cheesy bread florentine (alfredo, tomatoes and spinach with parmesan and provolone)
baby carrots
mango-banana fruit salad
ice cream

    Monday:
    Chicken quesadillas: 1 tortilla, .3 cup of shredded mozerella, 4 oz of shredded chicken breast.

    Tuesday:
    Scrambled egg sandwiches

    Wednesday:
    Pizzadillas: 1 tortilla, 7 pepperonis, .3 cup of mozerella cheese dipped in pizza sauce

    Thursday:
    Grilled hamburgers, no buns, and baked fries or a baked potato.

    Friday:
    Salad with shredded chicken, boiled eggs, carrots, lettuce and goldfish crackers instead of croutons.

    Saturday:
    Eating out at an Italian restaurant

    Sunday:
    Homemade chicken noodle soup.

    I dont have a plan for the week, but tonights meal will be grilled chicken, kidney beans, homemade salsa and steamed brocolli =)

    Subject to change depending on my whim that day... :) Pretty easy week because I don't want to buy tons from the store.

    Monday: Honey Lime Chicken Enchiladas (recipe on my blog!)
    Tuesday: Chili
    Wednesday: Chicken Stirfry (chicken, stirfry mix with some extra veggies thrown in, brown rice)
    Thursday: Chicken Harvest Soup
    Friday: eating out @ a Chinese place similar to Pei Wei...
    Saturday: Baked Potato Bar (with leftover chili or broccoli/cheese)
    Sunday (lunch): leftovers (probably chicken harvest soup) with grilled cheese sandwiches; dinner @ church

    Mon: Grilled chicken thighs with grilled veggies
    tues: Sage Simmered pork chops with pearled barley and spinach salad
    Wed: Chile Con Carne (spicy chipotle salsa with grilled chicken simmered in) over brown rice with guacomole
    Thurs: Healthy Stroganoff over whole wheat pasta grilled asparagus
    Fri: Grilled chicken fajitas in wheat tortillas with pico de gallo
    Sat: Turkey Meatloaf with grilled corn on the cob and roasted potatoes and veggies
    Sun: Teriaki grilled chicken breast with mixed baby greens and black beans
  • I agree you have to eat your alloted amount of calories for this to truely work. I would love to get your receipt for the Chile Rellenos Casserole I am a huge fan of Mexican food. I guess sometime I eat more that I should and that is why I have joined this sight.

    monday - diner meatloaf muffins, baked potato, asparagus
    tues - grilled lime/chili chix breasts, white rice, zucchini
    wed - sweet coconut crunch shrimp (not sure of sides - probably a rice and a fresh veggie)
    thurs - chinese take out
    fri - bbq beef sandwiches (crockpot) - i'll have a sandwich thin, my husband will have a hamb bun, cole slaw, corn on cob?
    sat - grilled carribean pork roast w/fresh fruit and potato wedges?
    sun - caribbean chicken (not sure of sides)

    i have gotten sooo many recipes from chef jeremy (foods are entered/listed under chef chapa) here on myfitnesspal.com....he has a blog but for some reason i can not find it right now....i went thru his entire blog and printed every recipe that looked good to me and then printed them out and put in a 3 ring binder of healthy recipes to make my weekly menu from....i have been planning our dinners for about 6wks i think and i love knowing what needs to be done as soon as i get home from work in order to get dinner on the table.....
  • Monday: Fish and rice and veggies
    Tuesday: Grilled Chicken and veggies
    Wednesday: Spaghetti Squash and Veggies
    Thursday: Left overs
    Friday: Turkey Burgers and veggies


    is all I know for now... or the nights might change on my mood but the food wont :)

    Some of these meals sound so yummy!

    How do you make your crustless pumpkin pie??? :-)

    2 cups (or 1 can) of pumpkin (NOT pie mixture)
    2 eggs
    1 cup skim milk
    2 teaspoons cinnamon
    1/2 teaspoon clove
    1/2 teaspoon nutmeg
    1 cup no sugar

    preheat oven to 375 degrees. mix all ingredients together (i do it right in the no-stick pie tin) and smooth top. bake for 15 to 20 minutes or until a toothpick inserted in center comes out clean. allow to cool and serve with cool whip. :) glass pie tins will affect the time needed to bake.
