Cream of Whatever Soup Substitute.

Instead of using mushroom soup, or cream of chicken for your cooking, try this! So good.

Basic White Sauce (thick):

3 Tablespoons butter or oil
3 Tablespoons flour
1/4 teaspoon salt
dash of pepper
1-1/4 cup liquid, milk or stock

Melt butter or oil in saucepan. Stir in flour and seasonings. Cook over medium heat until bubbly. Add liquid slowly, stirring with wire whisk to prevent lumps. Cook until thick. Makes 1 cup or 1 can of condensed soup.

Tomato Soup: Use tomato juice for the liquid. Add dashes of garlic, onion powder, basil and oregano.

Chicken Soup: Use chicken broth for half the liquid. Add 1/4 t. poultry seasoning or sage.

Mushroom/celery/chive soup: Saute 1/4 C chopped mushrooms, celery or chives and 1 T minced onion in butter before adding flour.

Allergy Suggestion: If you use a gluten-free flour (rice, tapioca, etc.) or cornstarch, you can make the soup gluten-free. And if you use a stock rather than milk, you can make it milk-free, too.


I adjusted this a little...here's my substitute, covers 3 chicken breasts

3 tbsp whole wheat flour
1tbsp extra virgin olive oil
1.3 cups of almond milk (60 calorie)
5 button mushrooms diced
1 garlic clove
2 green onions

per serving

100 calories
2g of protein
20g of calcium
10g of carbs
1g of fiber.

    Thanks for posting this. I always use bechamel sauce, and hate recipes that call for a can of condensed soup. It's so '70s.

    You can substitute corn starch or a smaller amount of xanthan gum for the wheat flour if the wheat's an issue. ;)

    lol feel free to throw cauliflower in there if you so choose. The best part of this cream of whatever soup sub is that there's endless options. Don't forget the herbs and spices though, without those it is kind of bland.
