Anniversary Dinner Recipe?

I'm looking for some ideas on what to cook for our anniversary dinner. Something that goes with champagne.

I was thinking scallops possibly? Anyone have some recipes/ suggestions?

  what kind of champagne? because it matters if it is dry or sweet.

  scallops
  smoked salmon
  melon
  prosciutto
  fried potatoes
  quiche
  crusty bread
  
  eta: mushroom, risotto, poultry and duck, veal.

  if its a brut or an extra brut you can do things that are buttery and fatty very well
