Baked Flounder on cabbage
Don't know if this is of any interest by I threw some things together tonight and it turned out to be quite tasty. The recipe came in under 200 calories and about 6 grams of fat per serving. Hope you enjoy it!
Lemon Flounder and Cabbage
Serves 2 or 3 people
3 fish fillets
4 or 5 cabbage leaves
2 cups of broccoli
1 tbsp extra virgin olive oil
kosher/sea salt
2 tbsp lemon juice
I sprayed a 9x13 glass baking dish with cooking spray. It might not necessary with all of the liquids, but it definitely did not stick. Place the cabbage leaves in layers on the bottom of the dish until it is completely covered. It was at most 3 leaves thick in mine. Drizzle a little olive oil on the cabbage leaves. Lay the fillets across the pan. Add a pinch or two of salt to each fillet. Drizzle the lemon juice on top of the fillets. Fill in the gaps with the broccoli being careful not to overlap the fish. Put it in an oven preheated to 400F and bake about 25 minutes.
If you cut through the cabbage with a knife after it comes out of the oven, the fillet and cabbage can be lifted out neatly with a spatula. Not that I'm picky about how the food looks after it has been plated... :happy:

This sounds good. I love all of the ingredients and eat fish a couple times a week. Always looking for different ways to fix the fish.0
