when my sister was a baby, she had too many carrots (because my mom thought they were wonderful) and her skin turned orange. Everyone thought that she was sick, and finally they realized it was because she was eating so many carrots. She was one healthy baby!

Eating too much is not healthy, even if you are taking something healthy but taking too much is not healthy at all. Make sure whatever you eat, you're eating a balanced amount. :)

good rule of thumb :) She is very healthy now, though. Those carrots may have helped. Who knows!

Same thing happened to a friend recently! I believe it's called Carotenosis? They are great for you, but don't eat them until you turn blue in the face....or Orange in this case!
  • Carrots must have helped her where carrots work! Stay Healthy! :)

That's true, actually most of the people don't care about the balanced amount, all they what to know is to keep taking like crazy whatever they found good for their health. "The more you eat, the more you'll become healthy" is absolutely wrong concept. I'll focus on 'balance' in my next post.

Sorry! didn't mean to put down carrots in any way. Just thought it was a good story about carrots. Will the carrots forgive me?
  • Including carrots as part of a healthy diet provides vital nutrients including vitamin A, potassium and calcium, according to the USDA National Nutrient Database. Fiber provided by vegetables such as carrots keeps your digestive system functioning regularly and well. While no good data exist on how many carrots in your diet would be considered excessive, you will know when you reach that limit by the development of side effects. Luckily, the side effects, although annoying as orange skin and gas, but rarely present any severe danger.

Well, I want to say thanks to you and srogers89 for reminding me the flip side. We should discuss the other side here as well so we can avoid making mistakes.

Awesome post! I stir-fry chopped carrots with other veggies and lentils in a little olive oil, but have just started taking raw chopped carrots with chopped apple to work for a snack.

One important (and GROSS) thing I found out about carrots: buy whole carrots, not the carrots sold as baby carrots.

The baby carrots sold in the USA are not real baby carrots, but are actually waste carrots trimmed down in the "baby cut style." They are then treated with chlorine to keep them from spoiling since the skin has been whittled away. Waste carrots are carrots with marks or shapes that are not attractive enough to be sold, so they are trimmed, treated with chlorine, and repackaged as baby carrots.

These "baby carrots" don't taste nearly as good as a whole carrot that takes less then one minute to chop up.

Sadly carrots are also full of carbs and sugar so if you are trying to follow a low-carb WOE, they are very much off the menu most of the time.....
