Comfort food recipe ALERT! Low Fat & Low Calorie!


Lightened Up Ritz Chicken Casserole


Ingredients:

20 Reduced Fat Ritz crackers
1 can cream of chicken soup 98% fat free
1/4 cup Fat Free Greek Yogurt - Plain
12oz chicken breast, cooked & shredded.
1tsp Celery Seeds
I Can't Believe It's Not Butter Spray

Preparation:

Preheat oven to 350.
Crush Ritz in a ziploc bag with celery seeds.
Spray a 9 x 7 casserole dish with nonstick spray.
Spread chicken on bottom of dish.
Mix together soup and yogurt, spread on top of chicken.
Cover with crushed Ritz, and spray with "butter".
Bake at 350° for 30 to 40 minutes, until Ritz are golden brown.

This makes 2 decent sized servings for about 395 calories each.

Completely decadent tasting and great served over rice!
