What to do with lots of ricotta?

I have a lot of ricotta cheese left over from a recipe I made last night and I want to use it before it goes bad. Any suggestions?
Ricotta freezes really well...I also like it with Pomegranate seeds and a spritz of honey. Or mixed with Pico de Gallo as a side to new steamed potatoes.0 -

Ricotta in lasagna, pizza, cheesecake. Does any of that sound do-able?0

Breakfast: slice of thick raisin toast and ricotta ,Yum
I have also eaten it with craisins and pecans sprinkled on it.

can use it in a fritata, make cannoli dip, baked ziti, stuffed shells, mix it with spinach garlic oregano and marinara sauce delish! also good with quinoa and spices0
