I just tried a lighter cornbread recipe today and, well, it was dry and just not good.

Anyone got one that isn't a ton of calories per serving?

  • I don't have a recipe but I use the Krusteaz mix and it is pretty good. The natural honey is 140 calories per slice.

I use Trader Joe's cornbread mix because all of Trader Joe's foods are sourced from non GMO ingredients. Plus it makes a really tasty, slightly sweet, moist cornbread. 1/8th of a 8x8x2 pan contains 191 calories.

I love corn bread so I have been doing some substitutions too lately. Corn bread just gets really calorie filled for me because of the butter and syrup on it.... I try to just eat a meal of it at noon because that is when I eat the biggest amt of calories. Good luck and keep working at it:)
