FOR WHEN I'M CRAVING PIZZA...
MINI MEATY CALZONES
Makes 20 calzones (3-4” width)
97 Calories each
Well, I just used what was available at home. You can definitely substitute the cheeses with healthier options Enjoy!
PIZZA DOUGH
3.5 cups semolina flour
1.5 tbsp olive oil
150ml warm water
0.75 tsp yeast
0.5 tsp sugar
Pinch of salt
1. Mix warm water with sugar and yeast, let it stand until the mixture is foamy.
2. Mix flour with salt and make a well in the middle.
3. Pour yeast mixture and olive oil in the middle of the flour well and slowly incorporate the dry ingredients with the wet ingredients using a fork from the inside of the well.
4. Mix until the dough forms little clumps, transfer the mixture on a floured surface and knead the dough until it forms a smooth and pliable dough.
5. Brush some oil on another bowl and put the dough in, cover with a tea towel and let it rest in a warm, dry area until the size doubles (better if left for 3-4 hrs)
FILLING
Cheese Filling:
45g Quick Melt Cheese (or shredded mozarella)
½ cup Kraft Shredded Parmesan Cheese
Pinch of Dried Thyme
Pinch of Spanish Paprika
1. Mix all the ingredients together and set aside.
Meat Filling:
12 strips of Beef Bacon, chopped
½ link of Hungarian Sausage, cubed
½ Tbsp extra virgin olive oil
1/8 cup tomato sauce
1 small tomato, chopped
1 small Red Onion, minced
4 Cloves of Garlic
Pinch of Dried Basil
Pinch of Dried Oregano
1. Heat olive oil in a pan, brown the bacon and the sausage.
2. Mix in the garlic, onion and tomato.
3. When the garlic is nearly golden brown, add in the other ingredients. Simmer for 3 minutes and take off heat.
ASSEMBLY
1. Preheat oven to 190 degrees Celsius
2. Roll the pizza dough out to be 1/8 inch thick
3. Cut 20 circles on the dough
4. Fill the center in with the cheese and meat filling
5. Fold the dough over into a half circle, crimp edges with the back of a fork, cut 2 small slits on the mini calzone.
6. For a shiny exterior, mix an egg with a teaspoon of olive oil and brush over the calzones.
7. Bake for 20-30 minutes in the upper third rack until the calzones are golden brown.
