Tuna cakes!

They turned out really, really good. I wanted something hot and easy today. I found the recipe here! http://www.genaw.com/lowcarb/tuna_muffins.html
2 6-ounce cans tuna (in water)
2 large eggs
2 celery stalks minced
1/4 onion
1/4 green pepper
1/2 cup shredded cheddar
Salt and pepper, to taste
A dash of Emerill's Bayou Blast (original recipe called for Old Bay seasoning but I didn't have it so I used the BB instead. It was super good!)
Mix all of the ingredients and spoon into 6 well-greased muffin cups. Bake at 350º for 30 minutes until puffed, set and lightly browned around the edges.
