i LOVE sweet potatoes. with their orange color, they are packed full of vitamins. you can multiply the recipe for as many guest you are having or to have leftovers.
my FAVORITE way to to eat them is cold...as a dessert. yes as a dessert. to me, cold it taste like pumpkin pie, without the high calorie crust. i have to limit myself to one serving a day when it's in the fridge.
i have portioned it out in 1 cup, but can easily be cut in half to reduce the calories and still have plenty of vitamins.
sweet potato (baked in the oven for about 90 minutes on 375F)
open the potato by slicing the it open, scoop ONE cup out the potato, place in food processor (stick blender can be used too)
add cinnamon and nutmeg (1/4 teaspoon of each, or to taste)
1 Tablespoon molasses.
blend (pulsing) till smooth
serve warm or cold. yummO!
253 total calories 58 carbs 1 fat 4 protein
(again, cut in half to reduce the calories in your daily plan)
