Baked chicken .. ideas??

Does anyone have a good recipe for baked chicken? I'm going to bake a whole bag of white breast meat. I'm planning to pop them in the freezer and thaw them out to put on my salads. I don't do the rice/potatoes or pasta so making them healthy is key yet not dull. Any ideas would be very appreciated. :)

    A quick shake and bake does the trick. Just go light on the coating.

    If your baking them up then cutting into strips to freeze for your salads, use some lemon pepper, or some rosemary and garlic, or some Italian spices. I do a few of each type then I can take out the flavor I want that day and I don't get bored.
  • I swear by McCormick Gourmet Herbes de Provence Roasted Chicken & Potatoes Recipe & Seasoning Mix. I dont put the potatoes but a little olive oil and thd seasoning ...it is SOOO GOOD! I also like to take Buffalo flavored seasoning and bake chicken as well to go on a nice blue cheese salad. Grillmates seasonings are great as well for different baked chicken flavors.

    The easiest and tastiest for me is using a zip lock bag and u put in the chicken pieces with a little olive oil - few table spoons of water and a packet of dry onion soup mix … shake it up including some peas/onion/mushrooms or whatever veggies you like - throw in a baking pan and it is finger licking good !!!

    My go to baked chicken recipe is just wrapping chicken breasts in tin foil with some salsa. The tin foil seals in the moisture and makes for super easy clean up. So easy, and works perfect every time!

    smear with mayo, sprinkle with parmesan, bake.

    or drizzle with honey, sprinkle with cayenne, bake.

    or layer on pan with sliced lemon and onions on top, bake.

    or brush with olive oil sprinkle with italian seasoning, surround with potatoes, garlic cloves, & zucchini bake.

    You might want to take a look at the website for Penzey's Spices. They have seasoning blends for every palate; I'd be amazed if you couldn't find a few that appeal to you. And since they carry an enormous selection of herbs & spices, you could also put together your own "custom" blends. Variety is a great help to staying on your dietary track! And once you're sure you like a seasoning blend, don't be overly afraid of applying it with a "heavy" hand. Some will dissipate in cooking, and if you cook then freeze as another poster mentioned, you'll lose a little "oomph" there too. BTW - the same processes we're talking about for chicken also work (for me, anyway) with lean pork....
