What are some of your favorite healthy recipes? I'm getting burned out by cooking the same stuff over and over again....

    I cant take credit for this one...but it makes alot and its easy, i used half the corn and used alot of different seasonings...i also found it makes way more than 6 servings, so i used about half the serinvg size for 2 burritos and used tons of iceburg lettuce, tomatoes and scallions

    Mexican Crockpot Chicken

    1lb. Boneless Skinless Chicken Breasts (I put mine in frozen)
    1/2 cup of salsa
    1 bag frozen sweet corn
    1 can of black beans, drained and rinsed
    1 can of Rotel Tomatoes with Green Chilies
    Chili Powder
    S&P
    1/2 block of cream cheese (I use 1/3 fat free)
    1 small onion diced

    Directions:
    Put chicken in crock pot and cover with all ingredients except for cream cheese.
    Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
    Cook for 3-4 hours on high, 7-8 hours on low.
    Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
    Serve over rice or in tortillas as tacos/burritos.
    I usually top it with some shredded lettuce and diced tomatoes.

    Makes 6 Servings.

    I just finished my favorite meal that was super easy...

    Smart Taco Salad,

    1 Dinner Bun - 110cal
    2 oz. Extra Lean Ground Beef - 65cal
    1 tsp Old El Paso Taco Seasoning - 10cal
    1/6 cup Low Fat Shredded Cheese - 45cal
    3/4 cup Leafy Greens - 10cal
    1/2 cup Green Beans - 22cal
    Green Tea - 0cal
    Total: 262cals

    I prepared a pound of the beef, with the taco seasoning, in advance. I also added 2 minced jalapenos for some kick and only .8cal/serving, and bagged the individual portions. Just heat up the beef, then put it on the greens. Then put the cheese on top of it all. Steam the beans, and warm the bun as sides.

    You should try it. It has a little of everything you need, and is really good. I love it.
