Frittata is easy and portable - you can make a big tray of it and freeze in portions. It'll include protein, fats and you can add loads of vegies. It can be eaten cold or warmed up.0

I do celery sticks with peanut butter and raisins, sometimes an apple with peanut butter (jif makes a serving size container) I also have started making smoothies with greek yogurt in my small blender0

Easy crustless quiche
2 whole eggs
8 egg whites(the kind in the carton work great)
1 roma tomato, seeded and chopped
1 med zucchini, chopped
½ bell pepper, chopped
1 cup raw spinach, wilted
½ onion chopped(can be cooked slightly with spinach)
Combine everything in a bowl and pour into a 9x9 baking dish sprayed with cooking spray. Bake at 350 for about 20 min or until center is set up. Cool and cut into 4 portions. Can be eaten cold or microwaved about 30 sec. Great served with salsa. About 100 calories a serving.
Tip: Use up extra leftover veggies. Any veggies will work, use what you like.
Cook ahead of time, easy to grab and go.
It can be made in muffin pans too.0 -
Skinny bagel, with 1/3% less fat cream cheese, and a couple slices of ham or lean meat of your choice.0

Yogurt, fruit and a handful of granola. Eggs take like 3 minutes, or a smoothie. Like to make breakfast sandwiches, add a slice of turkey, ham, bacon, an egg, some cheese and put on while grain toast, a bagel, English muffin, or hamburger bun. I like it cause its fast, and versatile, depending on what i have on hand. Sometimes I'll add whatever was leftover from dinner- steak or veggies!0

Hmm... low-carb soft tortilla & cheese makes a yummy quesadilla when you're on the run.0

I usually make a quick egg, cheese, spinach and deli turkey sandwich on english muffin or multigrain sandwich thin. Also, the new Special K hot cereal bowls are yummy.....0
