"Diet Cookies"

People keep asking how I lost the weight and the truth is I ate these "cookies".
They are not for everyone to use as a meal replacement like I did but they are a delicious treat and I love them!
I had a fresh fruit smoothie with almond milk and yogurt for breakfast a salad with beans or tuna for lunch and a large salad with my healthy-r dinner.
Please do not bash me! I am only sharing because a lot of people have asked.

Preheat oven to350

2c chex multi bran-or other comparable brand
1c rolled oats
3/4c non fat powdered milk
1/4c unprocessed wheat bran
2tbsp unsweetened cocoa powder
1 1/2 tsp baking powder
1/2tsp salt
1/4tsp ground cinnamon
mix well
set aside

in new bowl combine 1 lg rips mashed banana
4tbsp salted butter room temp
1/2c sugar I use Splenda baking mix
7lg egg whites
1 1/2 tsp vanilla
mix well and add to wet ingredients to dry and let sit for 5 minutes
divide in half and then divide again
each portion makes 6 cookies-I use an Ice Crem scoop
Bake 12min.

I discovered that if you put anything you bake directly in the freezer it makes them super moist!

    So how did you incorporate the cookies into your meals? which meals did you replace? how many cookies did you eat at a time? details?

    I would eat 6 cookies a day total and no other carbs.I would have 1 or 2 in the morning before work and my smoothie, hen I would have 1 or 2 as an afternoon snack. I like to put them in dark chocolate almond milk as a snack and If I get hungry between meals I would have a cookie.
    I would still have all three meals usually,just no carbs and no snacks. I had them on me all the time so if I did not have time to eat a meal I would have a cookie.

    I forgot to say that I put the mix in muffin tins instead of cookie style!!! Sorry!
  • Thanks for your recipe, got it on my profile but I forgot to ask you whether they were high in carbs and also do you know how many calories per bikkie? Need to put that in my food tracker diary.

  • I just made them and used a cookie tin with cupcake liners. They are very good, but they stick to the paper. Next time I will use Pam.

    YAY!!! I am so glad someone finally made them! Store them in the fridge because they are so moist.:flowerforyou:
