Vegetarian Recipe Ideas

I am planning on switching to a vegetarian diet in about a week (I have meat to use up, and I don't want to be wasteful by throwing it away). I know that to get all the necessary amino acids in your diet, you have to eat complete proteins, which is either quinoa or combining grains, legumes, and nuts/seeds in some way during the day.

But my question is, does anyone have any super yummy vegetarian recipes they have? I would like to stay away from fake meats like boca, morningstar, etc. and I don't particularly like tofu, but I would be willing to try it if it tasted amazing. Breakfasts, lunches, dinners, snack ideas are all welcome. :] Thanks in advance.

    www.eatingwell.com has awesome vegetarian recipes. I've been a vegetarian for 20 years and make these recipes with my meat-eating boyfriend, and he really doesn't miss the meat. Here are three of my favorites:

    I love quinoa toasted lightly with a little olive oil and shallot, I use vegetable broth - and I throw in toasted almonds and cranberries at the end. You can make a wonderful pasta sauce by roasting any tomatoes in a high oven and blending them up with basil, garlic and a little sauted or roasted onion. Toss with your cooked whole grain pasta. I also like the Gardein products (freezer section) when I am in a hurry. I am not vegetarian but I don't eat meat every day and rarely red meat. Eggplant parmesean (just don't bread and fry the eggplant) and Veggie Lasagne is also yummy. Lots of recipes - just Google them. Good luck!

    I just got a crock pot and vegetable soup is my new obsession. It's super easy, doesn't take much time, and you have food for the whole week.

    I've been a vegetarian for years, and I pretty much eat the same dishes as people who eat meat except I do usually use meat substitutes and the best one I've found is Quorn mince for any recipes you'd usually use mince for, and I use tofu for any dishes people would usually use poultry.
    Tofu stirfrys are fantastic, just as many vegetables as you can find and some tofu and a bit of peanut oil, lemon grass, and lime juice thrown in is delish.

    www.vegweb.com is also my favorite site for recipes. My favorite recipe as of late is lentil sloppy joes. I use cooked lentils in place of the ground beef and then I make sweet potato fries in the oven to go along with it.

    I just made this dish for dinner tonight:

    (Plus i added mushrooms, because i add mushrooms to almost anything!)

    Pretty tasty and it yielded about 6 servings each being 391 each!

    Here's a simple recipe:

    Feta and Spinach Filo parcels

    You'll need a pack of filo pastry sheets
    a couple of bags of baby spinach
    a pack of feta cheese (you could also use reduced fat feta or even goats cheese)
    a red onion (or white if you prefer) - chopped
    a red pepper - chopped or sliced as preferred (or use whatever colour you like)

    Stir fry the onion until soft using a reduced fat spray like Fry Light (sorry, don't know the American version)
    Add the pepper and cook until soft
    Meanwhile put the spinach in a pan with just a little water and cook for a few minutes until softened then roughly chop it up
    Combine all cooked ingredients and crumble in the cheese
    Mix all together

    Now open out the filo pastry sheets (you will need to work quickly with this to stop it drying out). You will need about 2 sheets halved (to make 4 squares per parcel).

    Spray the top sheet with Fry Light and turn it over.
    Do this with the rest of the sheets so that you turn over 2 then 3 etc until all 4 halves are done.

    Now put the filling into the middle of the pile of 4 sheets and fold so that you have a little parcel (hope this is all making sense)

    Do this until all the filling has been used - so you can determine the size of the parcels.

    Place on a baking sheet with greaseproof paper on and spray with Fry Light.

    Bake until the parcels are golden brown or freeze unbaked (when the filling is cold).

    I bought some half fat sour cream from Tesco's to serve with them and they were very tasty.
