    Lemon Chicken Breasts (from http://www.foodnetwork.com/recipes/ina-garten/lemon-chicken-breasts-recipe/index.html )

    Ingredients
    1/4 cup good olive oil
    3 tablespoons minced garlic (9 cloves)
    1/3 cup dry white wine
    1 tablespoon grated lemon zest (2 lemons)
    2 tablespoons freshly squeezed lemon juice
    1 1/2 teaspoons dried oregano
    1 teaspoon minced fresh thyme leaves
    Kosher salt and freshly ground black pepper
    4 boneless chicken breasts, skin on (6 to 8 ounces each)
    1 lemon

    Directions
    Preheat the oven to 400 degrees F.

    Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.

    Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

    Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

    + Spinach fetuccini and green peas.

    Pan fried chicken tenderloins with mushrooms and onions, roasted beets, steamed beet greens. Not terribly fancy but it's going to be delicious!

    Tonight I just made sliced sirlion tips, cooked medium, with costco frozen normandy blend veggies, one diced onion, dash salt and pepper, with 3tbsp teryaki sauce and 2.5 tbsp tonkatsu sauce, and 1 tbsp soy sauce. I pan - seared the steak in butter flavored 0 cal cooking spray, and steamed the veggies, died the meat, and "stirfried" it together. About 250/serving. Also had Oreo Ice cream sandwhiches for dessert- 200/sandwhich. Yum!

    cantaloupe jelly???? that sounds amazing and interesting at the same time...my biscuits mostly resemble hocky pucks, once in awhile I'll get lucky, lol

    Sauteed sliced beef, peppers,onions and mushrooms with terryaki seasoning. Served on a bed of quinoa cooked in low sodium beef broth. And ceasar salad made with low calorie dressing.

    We had venison brats paired with broccoli and cheese. : ) Nothing too fancy.

    It worked, that is a beef and veggie stew, lots of greens, swiss chard and kale, as well as some lettuces.

    Breakfast for dinner tonight was delicious comfort food. We had fried eggs, thick cut bacon, diced potatoes and an English muffin. My portions were under 500 calories total.

    I had Italian Spinach Sausage pie tonight! I found the recipe in the Taste of Home magazine, so it's also on their website here: http://www.tasteofhome.com/recipes/italian-spinach-sausage-pie

    It says that it is 692 calories a slice, but I substitute the ricotta with light sour cream, and have also found that the filling is enough for TWO pies, not just one, so I split the filling between two pie shells. Still a little calorie heavy, but I've been having a lot of muscle cramps lately, most likely from a lack of potassium, and this recipe uses 20oz of spinach!

    I had skinless grilled chicken breast with a cajun rub on top of a salad with mixed lettuce, japanese style coleslaw, avocado, capsicum, cherry tomatoes and cucumber with an olive oil balsamic dressing (you can check my diary if you want to see what I put in it :) I've tried to add a picture, hopefully it shows up!

    I can't for the life of me work out how to add a picture... :frown:
