HELP! Low Sodium casserole recipes to freeze

Hello everyone! A friend of mine is pregnant and on a low sodium diet. She is going to deliver baby Ezra in a couple weeks and I want to make some casseroles and freeze them for her so she won't have to worry about cooking (she is on bed rest now). Obviously, that is extremely hard to find! Oh and her husband is severely (he is taking injections) allergic to dairy products and eggs. He can have some of each but I don't want to take a bunch of stuff up there that he can't eat a lot of. Any suggestions of recipes or websites where I can find some would be extremely helpful.
