Crockpot Recipe: Low Calorie Cheesy Broccoli Chicken
I made this tonight, it was sooooo good. I kinda just threw these things together and I was pretty impressed with the flavor and calories. My husband and 2 year old daughter loved it too.
Ingredients that I used and based Nutritional Info off of:
3 chicken breasts, 4oz a piece
1 12oz Green Giants Fresh Steamers Broccoli and Cheese
1 V8 Garden Broccoli Soup
1 14oz Great Value Broccoli Florets
Salt and Pepper to taste
4 slices of Kraft American Cheese
10 oz of Garden Delight Veggie Pasta (not the whole box)
Directions:
Put in chicken.
Pour soup over top.
Then Broccoli and cheese, and the other bag of broccoli.
Cook on high for 4 hours.
Take out chicken and cut up or shred.
Put back in and stir, add cheese.
Cook pasta according to directions, drain, and stir in.
Next time I will get a different cheese to put in it, it just needed to be a little cheesy and I didn't have anything else on hand.
Nutritional Information based on above ingredients, 8 servings:
Calories-244 Carbs-35 Fat-5 Protein-17 Fiber-5 Sodium-517

I put it in at 2pm and it was done at 6pm...so 4 hours
As for another cheese, I would probably buy the 2% milkfat american cheese. I just had the other on hand because my daughter eats it. Even cheddar, but it's high calorie...I ended up putting a little cheese on top of mine last night and added those calories separate to my diary.0 -
Sounds AMAZING! However my husband won't eat vegetables at all, but I think I might make this one day this week and then use it as lunch for a few days0

I put the chicken in frozen, I buy the 5lb bags of frozen chicken breasts, so I just threw 3 of them in.
If on low, I would say about 6-7 hours?0 -

I have no idea on the actual serving size. I never measure how much I actually eat. It's a pretty good serving though, maybe 1.25 cups? After feeding hubby, daughter, and I... I filled an entire 6 cup bowl for leftovers and threw a little bit out because I didn't have room.0

This really sounds good, who doesn't like broccoli and cheese?????? I love crockpot ideas, it is easy just put it in and let the pot do the rest!!!! I will be trying this sometime this week. Thanks for the idea!!!0
