Pumpkin Spice Roasted Chickpeas

Options
1 can of chickpeas, rinsed, drained and patted dry

2 T. maple syrup

1 t. canola oil (or oil of your choice)

1 t. apple cider vinegar

1/8 t. salt

1/4 t. nutmeg

1/4 t. ginger

3/4 t. cinnamon

Preheat oven to 350. Combine all ingredients in a large mixing bowl until evenly coated.



Spread chickpeas on a cookie sheet sprayed with cooking spray.



Bake for 25 minutes. Stir chickpeas every ten minutes to ensure even crisping.



good as a snack or thrown in a salad

    Oh - this is totally something I would make! (I get lazy and just dump some olive oil and cumin on them and throw them in the oven)

    Nutmeg, Ginger and Cinnamon are spices normally used for spicing up a pumpkin flavor.

    yummy :) even though last time I roasted chickpeas I ate the whole can! yikes! they are just too good - I know they are healthier but uh, a whole can really added up fast, that was my lunch and dinner that day!

    Well I just copied that to an email and sent to several people! What a great snack to have while preparing Thanksgiving dinner. So instead of having my hand stuck in the fried onion can (green bean casserole) I can snack on these. Plus I think the kids will love em too :love:
