Easiest summertime dinner ever - Mahi Mahi

I made this tonight and it was so simple and so yummy it's crazy.

Frozen mahi mahi fillets from Trader Joes thawed out
1 lime
3-4 cloves garlic
salt & pepper

After my fish was thawed out, I cut the lime in half, squeezed it over the fillets, grated my garlic and put half over all the fish then a little bit of salt and pepper. Turned the fish over and used the second half of the lime, the rest of the garlic and a bit more salt and pepper.

Pan seared the fish in a med-high pan with a bit of olive oil until a good brown sear is on one side, turn and finish. I served with fresh sliced cucumbers in rice vinegar. Everything was so light and refreshing and the fish had such a moist and fresh taste. The whole dinner came to about 310 calories using about 6oz of the fish.

    Mahi is so great, I also love putting it into corn tortillas with homemade pico de gallo for fish tacos!!!
