    Quinoa is a very, very versatile food. I use it the same way other people use rice. Go to? STIR FRY. :D

    Mango Quinoa Salad
    Recipe adapted from Ali Vincent

    2 cups cooked quinoa* at room temperature, or chilled
    1 14 oz can black beans, drained and rinsed
    1 medium mango, peeled and diced
    1 red bell pepper, diced
    6 green onions, thinly sliced
    1 handful chopped cilantro (about 1/2 cup)
    4 tablespoon red wine vinegar
    3 tablespoons extra virgin olive oil
    1-2 tablespoons fresh lime juice
    kosher salt
    freshly cracked black pepper

    *Quinoa can be cooked in water or broth.  I suggest using vegetable or
    chicken broth for enhanced flavor, but plain water works great too.

    Place cooked quinoa in a large bowl.  Add mango, red pepper, green
    onion, black beans, and cilantro.  In a small bowl combine vinegar,
    olive oil, and lime juice.  Whisk until smooth and pour on top of
    salad.  Toss to combine and add salt and pepper to taste.  Chill for
    at least one hour before serving.

    I just make any type of chicken stir fry and put on top of cooked quinoa.

    we love quinoa in our household. I usually make it as a replacement for rice and often put in stuff like black beans etc as the recipes above. However I have recently discovered that it's great for making chocolate cake!

    This is now my go-to recipe for chocolate cupcakes. I just top them with a simple chocolate ganache or pumpkin whipped cream or nothing. My kids love them. I just made a batch today. One great thing is that they are nut free and gluten free, so they are good for bringing to places (school parties, bake sales, and work potlucks) where people have food allergies/sensitivities.

    note that I made today's batch with 1 cup of sugar rather than 1 1/2 cups. No-one noticed.

    Ah-mazing! Cupcakes? I am going to try those, if not this weekend, then next weekend! On a side note- it was incredibly difficult to find quinoa in my rural town, but by golly, I found it. So expensive here!!

    Does anyone purchase quinoa online for a better deal??

    yes!!! cupcakes - and they are dead easy. other than cooking the quinoa you just basically throw everything in a blender then pour into cupcake liners.

    it tastes like proper chocolate cupcakes - you would never know.

    I have been doing a quinoa parfait for breakfast

    1/4 cooked quinoa
    1/4 cup plain greek yogurt (could do 1/3 cup)
    1/4 cup berries (I use a mixed berry blend of strawberries, blueberries and raspberries)
    1/4 cup granola or chopped nuts

    Layer in to half pint mason jars starting with berries. I usually keep the granola in a snack bag and put on right before eating.

    I add quinoa to soup

    U have to wash it thoroughly as it can taste a bit earthy /even bitter

    Also, I like to pan roast mine for about 10 to 15 minutes ..until it starts to pop

    I use it as a rice substitute, anything I would use rice for I use quinoa.

    I have also started to add it to my salads.

    I have also used it in place of bread for stew before.

    A scoop of quinoa in a bowl and the stew overtop. Yummy

    Try seeds of change- quinoa and brown rice. It's so good. Microwave for 90 seconds. Done! Got mine at costco

    Something simple I do, when in a rush. Wilt some spinach at the end of cooking the quinoa, throw some feta in, and top with a favorite hot sauce.
