I am in need of some new ideas for side dishes. I would like to know what your healthy "go to" side dishes are. Mine is steamed broccoli but I am getting tired of it.

    I love sautéed spinach...especially under a poach egg! This was dinner a few nights ago.

    Tonight we had oven roasted broccoli.

    1 pound broccoli, rinsed and trimmed
    2 tablespoons olive oil
    2 cloves garlic, minced
    1/2 teaspoon kosher salt
    1/4 teaspoon freshly ground black pepper
    1/4 cup finely grated Parmesan

    Directions

    Preheat oven to 425 degrees F.

    Cut the broccoli florets into bite size pieces. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.

    Place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

    Steamed Green Beans with salt, pepper and garlic powder

    Sauteed Zucchini & onions with salt, pepper & garlic powder

    Baked sweet potato

    Cous-cous with chopped carrots, celery, black olives and a splash of chicken broth & grated cheese

    I love broiling my veggies. Just about anything, slapped on a cookie sheet drizzled with olive oil lightly, sprinkled with sea salt ad broiled at 425 is tasty. Some things benefit from a squeeze of fresh lemon when they come out of the over. Seriously though, everything is tasty like this! Brussell sprouts, broccoli, cauliflower, asparagus, green beans...everything.
