    Hiya. I am trying to have a more low carb diet as well and have been started to try and practice the Atkins sauces. I am quite happy with grilled meats and steamed green veges most of the time, but sauces make a difference. I made the buffalo chicken wings and dip, that was nice, but I love blue cheese anyway, I tried the ribs and sauce over the weekend, still nice not sure I made it right :blushing: .. but yeh, would like to see what yummy recipes are out there tooo! :smile:
  • Casseroles and soups tend to be pretty low in carbs if done right. Try adding some low carb veggies and some trim meat to some stock, boil and hey presto. For the veggies cauliflower comes to mind, it absorbs the flavour of everything around it and mashes up to make a more filling soup. Also carrots, kumera and pumpkin (in moderation) are great to add. Eat as is for a casserole, or mash up for a soup.

    Also try salads. Most of the 'bad' in salads comes from the dressing, so pick a low carb offering or keep the amount of dressing really low.

    Another idea is to grill, rather than fry or bake. Make a tasty marinade with spices of choice (I like turmeric and chilli) and add just enough natural honey to bind. Brush over chicken, turkey or light fish and grill.

    Chilli with mashed swede and grated cheese on top - easy as and delicious! Also salmon fillets, olive oil and soy sauce on top, sprinkle with sesame seeds and bake in the oven whilst stir frying some chinese style veggies. Chilli for lunch and Salmon for tea tonight - a good Monday!

    Chicken breast with seasoning of your choice and green veggies is a great standby as are omelette, bacon and eggs etc.
