Hi all,
I am on a lean eating diet plan and tomorrow I am supposed to be whipping up a batch of clean quesadilla's with coconut flour tortillas..
This is the recipe I have for them:
For 2 large tortillas..
6 TBS egg whites
2 TBS water
2 TBS coconut flour
1/8 tsp baking powder.
However, I am worried that this will taste too eggy or coconutty!?
Has anyone made anything similar or has any suggestions? I can see these being a disaster already!
Cheers,
Laurel

i will try these tonight if I can.
I find that when you cook with coconut flour the result does not taste coconutty - this recipe sounds like it should work. You do need a lot of liquid for coconut flour.
edited to add: I found this website which discusses the recipe - -http://realhealthyrecipes.com/2013/05/11/real-healthy-coconut-flour-tortillas/0
