    what is peperoni spread?

    Diced pepperoni, put it int he food processor, took half of it and rendered the fat and crisped it up and took the rendered fat, crispy and uncrispy pepperoni and folded it in with softened cream cheese

    You could also remove the egg yolks if you don't want the saturated fats or cholesterol :)

    I use whole eggs. By getting rid of the yolks, your throwing out a lot of healthy micro nutrients, plus a portion of the protein. Also, more recent research that I've read is showing that eating cholesterol and saturated fat does NOT raise cholesterol levels in the blood.

    Does this make it like scrambled eggs then? I never thought about trying to make eggs in the microwave, but a microwave and toaster over are my only kitchen right now...

    I like cottage cheese in things (like lasagna) more than by itself, so this would be great for me! Some spinach and or mushrooms if I have time would be good too...

    P.s. I eat about 40% fat, much of it saturated animal fat and I have really good blood work. An egg is one of the most complete forms of protein and should never be half wasted by throwing out the yolk.
