Avocado Suggestions?

I've got a couple of avocados in the fridge that are nearing the end of their life. I don't want to have to pitch them. Looking for some creative uses for them? How do you use avocados?

I put some in a smoothie this morning and it was NASTY! So that is out.

    I looooooove guac!!! What all do you put in yours? I do have some tomatoes at home too. Maybe I'll whip some of that up. No chips or tortillas though - not that I'm opposed to eating it with a spoon.

    This avocado egg salad is so good!..

    1 medium avocado, pitted and peeled
    2 tablespoons (30 ml) mayonnaise, or Greek yogurt
    1 1/2 teaspoons (7 ml) lemon juice
    4 hard-cooked eggs, peeled and chopped
    1 medium-length celery stalk, finely chopped (about 3 tablespoons)
    1 tablespoon (15 g) finely chopped chives, parsley or dill
    Salt and black pepper, to taste
    Directions
    Mash avocado, mayonnaise and lemon juice together in a medium bowl. Stir in the eggs, celery and chives. Season with salt and pepper.

    Tuna avocado salad is great..

    1 can tuna, packed in water
    1 avocado, pitted and peeled
    2 tablespoons olive oil
    2 tablespoons lemon juice
    1 green onion, sliced
    ½ cup chopped parsley
    Salt and pepper

    DIRECTIONS

    1. Place tuna and water into a bowl.
    2. Chop avocado and add along with the rest of the ingredients.
    3. Toss well and serve with crisp bread.

    I like my guacamole simple. Avocado, lemon or lime juice, green onions and bit of salt. you could dip veggies in it.....or as you mentioned, a spoon :)

    - On eggs or omelettes.
    - With barbecue chicken sandwiches or even just any type of sandwich
    - Add them to your smoothies, which adds an extra oomph of creaminess
    - Crack an egg in half the avocado, cover with cheese and bake in the oven
    - Spread on toast with a little bit of garlic powder on top
    - Last resort, just enjoy with a spoon

    I might have a slight addiction to avocados :blushing:

    I LOVE Avocados. I put them on bread with tomato and salt, I use them in my salads, we have guacomole about twice a week with mexican dinners. I am not opposed to sprinkling a little salt and eating it right out of the shell, if you mix a little plain yogurt with a smashed avocado it makes a great mayo replacement for sandwiches.

    I tried baking sweet peppers stuffed with avocado in the oven a few nights ago, it was disgusting. :X

    I put them in my smoothies sometimes..gives them a smooth texture. I also just love to eat avocados with lemon and pepper on them or just by themselves. I eat them on eggs, sandwiches, burgers, just about anything.

    When I make Kale salad I often throw a 1/4 or 1/2 (2 people) of Avocado in there. I actually massage the kale and break up the avocado so it coats it more like a dressing. Squeeze in some lemon too plus all your other veggies. It's really good!

    I take them apart and then put a dollop of aioli in the dip where the pit was. Eat the lot with a spoon.

    Thanks for all the great suggestions!!!!! I never knew so many ppl just ATE avocado too - I may have to give that a whirl.

    Where I live they are on sale at Aldi for 49 cents - can't beat that.

    Avocado Ranch Dressing
    Source: Soup Spice Everything Nice
    Makes approx. 1 cup

    Ingredients

    1/2 medium/large avocado
    1/4 cup light mayonnaise
    1/4 cup light sour cream
    2 Tbsp low fat buttermilk
    1-1/2 tsp lime juice
    1/2 tsp salt
    1 tsp cilantro, minced
    1 tsp green onion, minced
    1/2 tsp dill, minced
    1/2 tsp garlic, minced
    Dash black pepper
    A sprinkle cayenne pepper

    Directions

    Place the avocado in a bowl and mash with a fork until it is smooth. Add in the rest of the ingredients. Stir until everything is mixed well. Place, covered in the refrigerator to let flavors blend. Serve as a salad dressing or dipping sauce.


    Avocado Delight

    Ingredients

    4 slices of soft light wheat bread
    1/4 cup light mayonnaise
    1/2 cup reduced fat, sharp cheddar cheese
    2 lettuce leaves, ribs removed
    2-4 tomato slices
    Alfalfa sprouts (optional)
    1 medium/large avocado, diced
    Jane’s Krazy Mixed-Up Salt to taste

    Directions

    Spread mayo on one side of each piece of bread. Top two slices of bread with cheese. Layer with lettuce, tomato and sprouts, sprinkle with Jane’s. Top with avocado, also seasoned with a sprinkling of Jane’s. Assemble sandwich and cut in half.


    Tomatillo and Avocado Salsa

    Makes about 3-1/2 cups

    Ingredients

    6 medium tomatillos, husked and rinsed
    1/2 medium onion
    1 jalapeno chile
    1 Hatch chile (Anaheim)
    2 cloves garlic
    1/2 cup fresh cilantro leaves, loosely packed
    1 avocado, stone removed and peeled
    Salt and freshly ground black pepper

    Directions

    Turn the ovens broiler to high. Lightly spray large baking sheet with olive oil cooking spray. Put the tomatillos, onion, jalapeno, hatch chile and garlic on the baking sheet. Broil until the tomatillos turn olive-green color, about 5-10 minutes. Remove from oven and allow to cool. Transfer the tomatillos, onion, garlic and chiles to a blender. Add cilantro and avocado; blend until smooth. Season with salt and pepper. Refrigerate until ready to use.


    Crab and Avocado Sandwich

    Ingredients

    4 slices Sourdough Bread
    Light Butter
    4 slices Pepper Jack Cheese
    1/2 cup Lump Crabmeat
    1/8 cup Thousand Island Dressing (recipe follows)
    1 medium/large avocado, sliced
    Salt and pepper to taste

    Directions

    Spread butter on one side of each piece of bread. Place two slices of bread butter side down in a skillet. Layer with pepper jack, crab meat, dressing and avocado, season with salt and pepper. Top with another piece of pepper jack and remaining slices of bread butter side up. Turn skillet on to medium high heat. Grill sandwich until golden brown. Carefully flip sandwich and continue to grill until second side is golden brown. Remove from pan and cut in half on the diagonal.
